Put oil in a Dutch oven over high heat until the oil starts to smoke. Carefully add the beef and sprinkle with 1/2 the salt and pepper

Allow to fry until it is well browned, turn, sprinkle with the rest of the salt and pepper

Allow the second side to brown, turn and add the chicken stock

Bring to a boil, reduce heat, cover and simmer for 2 1/2 hours

Add the vegetables and simmer for 1 hour
